Enjoying the comfort of a cool house in summer heat has inspired reading, napping and cookie making this Sunday. I decided on dark chocolate macaroons, or in honor of Amy Sedaris "dark chocolate dammits!" These cookies are hard to resist, they are chewy and have a nice crunch to them. You too will proclaim "Dammit!" when compelled to eat many at once!
- Dark Chocolate Dammits!
- 3 egg whites
- 1 pinch salt
- 3/4 cup white sugar
- 1 1/2 cups dark chocolate chips (or semisweet)
- 2 1/4 cups shredded or large flake coconut
- 1 teaspoon vanilla extract
- A bit of flour
Directions
- Preheat oven to 325 degrees F (165 degrees C). Line cookie sheets with parchment paper, or grease.
- Melt chocolate over low heat and let cool. (I double boil it)
- In a large glass or metal bowl, whip egg whites until foamy. Slowly add salt and sugar a little at a time, until mixture stands in peaks. Stir in vanilla. Fold in chocolate and coconut. Drop by teaspoonfuls about 2 inches apart on cookie sheets.
- Bake 10 to 12 minutes. Cookies should be soft in the center.
